The global potato processing industry is undergoing a structural transition. Processing capacity is gradually shifting from Europe toward Asian markets, led by China and India. At the same time, rising labor costs, volatile energy prices, and climate variability are accelerating an industry-wide pivot toward high efficiency and automation.

As China and India rapidly expand their capacity in frozen fries and other value-added products, European processors face a dilution of global market share. In response, European companies are shifting their focus from volume growth to value creation through technology. By implementing advanced cutting systems, the raw potato requirement to produce 1.0 kg of finished fries has dropped from 2.0 kg to approximately 1.6 kg. Meanwhile, new vapor-recovery systems have reduced fresh steam demand on some flake and starch lines by up to 80%. Additionally, flexible and highly automated lines have become standard in new facilities to mitigate labor shortages and manage variable raw-material quality.

Regarding market prices, physical signals remain generally stable for now. In Poland, wholesale prices for early potatoes held steady around EUR 0.50–0.70/kg at the end of June, and industrial potato starch in Lodz remained stable near EUR 0.66/kg FCA. However, a recent heatwave bringing temperatures above 40°C across Western and Central Europe occurred during the crucial tuber-bulking phase. This has raised concerns over the 2026 yield and quality in major producing nations such as France, Germany, Belgium, the Netherlands, and Poland. Indicative German potato starch assessments rising above EUR 5.50/kg reflect a structurally tighter expectation in the derivatives segment.

Industry analysts note that while enhanced processing efficiency may cap extreme price spikes for bulk raw potatoes, weather risks and premiums for quality assurance are expected to support price floors for starch and high-spec processed products. In the short term, European raw potato spot prices are expected to retain a firmer bias amid weather-related volatility. For processors and traders, key strategies include securing coverage for the fourth quarter during this relatively stable window, and gradually diversifying procurement and asset footprints toward expanding Asian capacity to hedge against future climate risks.
